Food for thought...


This Jamie Oliver salad is one of the best things I've made recently.   I skipped the parboiling and used the higher temp roasting method for the carrots in this very similar ABC Kitchen recipe to simplify the prep and had to use oj in place of the halved orange/juice and it was delish.  I like the mix of seeds in the JO version and added extra greens to turn it into a meal. It was minimal effort that turned a weekday lunch into a moment to slow down mid-day and truly recharge.
